Applesauce Cake

There is a distinct crispness to the air today – we are in a fluctuating pattern
where it feels like autumn on day and summer the next. There’s talk that we
I can understand why on days like today, poets may wax poetical about the
cool breeze, the sound of the leaves, the singing of the birds, the first sight
of a flock of Geese (which I saw Saturday), the richness of the color of
the flowers – giving their last triumphant show.
In the October 1998 issue of Magazine they quote Edna St. Vincent Milla,
‘O world, I cannot hold thee close enough!’ Extolling the fleeting, ‘flaming
glories of an autumn day’. I agree with the sentiment, ‘Fall is a time that
stirs our souls’.

Each season holds its allure. To me, autumn stirs within us the desire to
walk through silent woods – imagining our own music –
‘you come, dreaming of ferns and flowers and new leaves unfolding…these
are the woods you love…Ferns, leaves, flowers, the last subtle refinement,

This weekend I made for us an applesauce cake – baked in a rose-shaped
bunt pan. I used apple cider with powdered sugar for the glaze. My family
told me they could detect the fragrance of the cake from upstairs and thought
I was making pancakes with apples – they were not disappointed when I
presented the cake after Sunday lunch.
Today, I offer it to you with your choice of tea or coffee – I’ve brewed
some in my French Press – I love this teacup and saucer holder that I
found at my friend’s store, ‘Rooms U Love’ It is so sweet with the cups
and looks lovely without.
These roses are Memorial Day – their fragrance is strong and a very
distinct ‘rose’ scent. The last roses, fragrant-applesauce cake, the
beconning woods, warm tea or coffee… lift my spirits as the gentle breeze
lifts and swirls around me.
